Loaded Bacon Patty Melt

Loaded Bacon Patty Melt

Thick toasted bread, a juicy beef patty, crispy bacon, molten cheddar, sweet caramelized onions, and creamy burger sauce in every layer. This is diner comfort food at its best — crispy outside, gooey inside.

Ingredients

  • 1 lb ground beef (80/20)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • Salt and black pepper, to taste
  • 6 slices bacon
  • 1 large onion, thinly sliced
  • 1 tbsp butter (for the onions) + 2 tbsp butter (for the bread)
  • 1 pinch of sugar (for caramelizing)
  • 4 slices cheddar cheese
  • 4 thick bread slices (Texas toast or sourdough)
  • 1/4 cup burger sauce (1/4 cup mayonnaise, 1 tbsp ketchup, 1 tbsp yellow mustard, 1 tbsp finely chopped pickles, 1/4 tsp garlic powder, 1/4 tsp smoked paprika, mixed)

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove and set aside, leaving a little bacon fat in the pan.
  2. Caramelize the onions: melt 1 tbsp butter in the same skillet, add the sliced onion with a pinch of sugar and salt, and cook on low for 12–15 minutes, stirring often, until deep golden and sweet.
  3. Mix the ground beef with garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Form into 2 wide, flat patties slightly larger than your bread slices.
  4. Griddle the patties over medium-high heat for 4–5 minutes per side until nicely browned and cooked through.
  5. Stir together all burger sauce ingredients.
  6. Build each melt: spread burger sauce on 2 bread slices, add a patty, 2 slices of cheddar, 3 bacon slices, and a pile of caramelized onions. Top with the remaining bread.
  7. Butter the outside of the bread and griddle each sandwich over medium heat for 3–4 minutes per side, pressing gently, until golden brown and the cheese is fully melted.
  8. Rest for 1 minute, slice diagonally, and serve hot while the cheese is still dripping. Enjoy!
