Loaded Bacon Patty Melt
Thick toasted bread, a juicy beef patty, crispy bacon, molten cheddar, sweet caramelized onions, and creamy burger sauce in every layer. This is diner comfort food at its best — crispy outside, gooey inside.
Ingredients
- 1 lb ground beef (80/20)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp Worcestershire sauce
- Salt and black pepper, to taste
- 6 slices bacon
- 1 large onion, thinly sliced
- 1 tbsp butter (for the onions) + 2 tbsp butter (for the bread)
- 1 pinch of sugar (for caramelizing)
- 4 slices cheddar cheese
- 4 thick bread slices (Texas toast or sourdough)
- 1/4 cup burger sauce (1/4 cup mayonnaise, 1 tbsp ketchup, 1 tbsp yellow mustard, 1 tbsp finely chopped pickles, 1/4 tsp garlic powder, 1/4 tsp smoked paprika, mixed)
Instructions
- Cook the bacon in a skillet over medium heat until crispy. Remove and set aside, leaving a little bacon fat in the pan.
- Caramelize the onions: melt 1 tbsp butter in the same skillet, add the sliced onion with a pinch of sugar and salt, and cook on low for 12–15 minutes, stirring often, until deep golden and sweet.
- Mix the ground beef with garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Form into 2 wide, flat patties slightly larger than your bread slices.
- Griddle the patties over medium-high heat for 4–5 minutes per side until nicely browned and cooked through.
- Stir together all burger sauce ingredients.
- Build each melt: spread burger sauce on 2 bread slices, add a patty, 2 slices of cheddar, 3 bacon slices, and a pile of caramelized onions. Top with the remaining bread.
- Butter the outside of the bread and griddle each sandwich over medium heat for 3–4 minutes per side, pressing gently, until golden brown and the cheese is fully melted.
- Rest for 1 minute, slice diagonally, and serve hot while the cheese is still dripping. Enjoy!
