Crispy Garlic Butter Chicken Parmesan Bites

Golden, crunchy, cheesy — and that marinara dip is everything. These crispy garlic butter chicken parmesan bites are the party appetizer that disappears first: juicy chicken coated in a garlicky parmesan crust, pan-fried until golden, then tossed in warm garlic butter and served hot with marinara for dipping. Ready in about 30 minutes, and just as good as a weeknight dinner as they are on a game-day spread.

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch bites
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1 cup finely grated parmesan cheese, divided
  • 1/2 cup vegetable oil, for frying
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 cup marinara sauce, warmed, for dipping

Instructions

  1. Pat the chicken bites dry. Season with salt, pepper, garlic powder, and Italian seasoning.
  2. Set up a breading station: flour in one bowl, beaten eggs in a second, and panko mixed with 3/4 cup of the parmesan in a third.
  3. Dredge each chicken bite in flour, dip in egg, then coat well in the panko-parmesan mixture, pressing gently so the crumbs stick.
  4. Heat the oil in a large skillet over medium-high heat. Fry the bites in batches for 3–4 minutes per side, until deep golden and cooked through (165°F inside). Drain on a wire rack.
  5. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 30 seconds, just until fragrant — don’t let it brown.
  6. Return the bites to the skillet and toss in the garlic butter until every piece is glossy. Shower with the remaining parmesan and the chopped parsley.
  7. Serve immediately with warm marinara for dipping.

Pro Tips

  • Keep the bites in a single layer while frying — crowding the pan drops the oil temperature and softens the crust.
  • For an air fryer version, spray the breaded bites with oil and cook at 400°F for 12–14 minutes, flipping halfway.
  • Use finely grated parmesan, not shredded, in the breading — it melts into the crust instead of clumping.
  • Make the garlic butter at the very end so it stays glossy and the garlic stays sweet, not bitter.
